You are a grown man or woman who has the right to eat some damn cookies for breakfast if you wish!
When I was a kiddo and young teen, I didn’t make the healthiest choices when deciding on what to kick start my day with. Some days I had cereal, and sometimes I had chocolate cake followed up by a Kit Kat bar. I’d get to school, and go straight into PE. How I could live like this, is beyond me, but that young body could take some damages, I suppose.
These cookies, which will recemble the texture of a scone, are super easy and healthy to whip up. The basic recipe will turn out not too sweet, but there’s no limit to what the imagination and your cravings can add to them, to make them as sweet or as savory as you’d like.
They contain only real ingredients, and a ton of fiber and protein, from the main star – chickpeas. Legumes are so versatile. You can cook them, bake them, straight from a can eat them. How can you not love these small things!
Ingredients:
1 can of rinsed chickpeas
1/2 cup of apple sauce ( a banana if you want more sweetness)
1 cup of oats
1/2 teaspoon of baking powder
Cinnamon to taste
Instructions:
preheat your oven to 350•. Blend together all of your ingredients in a food processor until it forms a nice “Cooke dough” like consistency. If you want to add things, this is where you go crazy! Chocolate chips, dried fruit, potato chips, I don’t know, whatever you like. Form small cookie shapes, and place them on a tray laid with parchment paper (I know that my cookies are laid out on foil. Don’t do this! Use parchment paper!) Bake in oven for about 20-30 min. Check on them after 20 min, they should have a slight golden brown color on the edges. Let cool, and enjoy!
Pro tip – Do not try to see if they’re ready by going in with your fingers unprotected… We all make some bad choices sometimes, don’t judge me.
You can always top them off with chocolate sauce, frozen berries, dip them in salsa for a more savory vibe. Now you can treat yo self every day!
